Beyond her academic and counseling roles, Mercedes is the founder and owner of Eight16 Culinary Therapy, an innovative practice that merges the therapeutic power of cooking with mindfulness and holistic healing. Through Eight16 Culinary Therapy, Mercedes seeks to transform lives by guiding individuals on journeys of self-discovery, nourishment, and empowerment. Her sessions use cooking as a path to emotional well-being, helping participants understand the interconnectedness of food, mental health, and community.
Mercedes describes culinary therapy as “a non-traditional therapy intervention where cooking serves as a tool for emotional healing.” Her approach encourages individuals to embrace sensory experiences, from the transformation of ingredients to savoring the flavors of a carefully prepared meal. This therapeutic process fosters an environment where clients feel safe to explore their emotions, promoting healing and mindfulness.
As an interactive, family-systems therapist, Mercedes incorporates complementary methodologies to tailor her approach to each client. Her multidimensional style explores each person’s biological, psychological, social, physical, and spiritual needs. She is passionate about helping clients from different age groups, ethnic backgrounds, sexual orientations, and religious and socioeconomic contexts to heal from trauma, build self-worth, improve communication, and reach their personal goals.
A proud member of Delta Sigma Theta Sorority, Inc., San Diego Alumnae Chapter, Mercedes extends her commitment to community service and social justice beyond her professional career. She actively participates in social justice activities and various committees focused on diversity, equity, and inclusion, underscoring her belief that everyone deserves representation and respect in all areas of life.
Outside of her professional pursuits, Mercedes enjoys traveling, cooking, experimenting with new recipes, watching documentaries, participating in community service, listening to music, and spending quality time with family and friends. Her Labradoodle, Sir Bo, often joins her on adventures, bringing joy to her household. Through cooking, she not only relaxes but also connects with her heritage and family traditions, drawing inspiration from her grandmother’s southern recipes.
